Fiddlehead — Matteuccia struthiopteris

Fiddleheads are the tightly curled young shoots of the ostrich fern, a species commonly found in moist, shaded areas along rivers and floodplains.

They emerge in spring and gradually unfurl into tall green fronds as the season progresses.

Ostrich fern fiddleheads are a well-known seasonal food in New Brunswick and are traditionally harvested before the fronds open fully.
