BeauSoleil Oyster — Crassostrea virginica
BeauSoleil oysters are Eastern oysters grown in Miramichi Bay, New Brunswick. They are farm-raised using suspended culture, with the oysters held in floating bags near the water’s surface.
They are known for their small, deep-cupped shells and firm flesh, with a flavour that balances gentle brininess and sweetness with subtle nutty notes.
The Eastern oyster is the oyster species cultivated on New Brunswick’s east coast and is an important part of the province’s shellfish industry.
